Hash Potatoes

Ingredients:

2 large Idaho potatoes
1 tablespoon extra-virgin olive oil
2 tablespoons butter
2 small, soft apples, chopped
1 small onion, chopped
Salt and pepper

Instructions:

Using a fork prick the potatoes several times.
Microwave on high for 10 to 12 minutes.
Cool potatoes and chop into small pieces.
In a medium size skillet heat the olive oil and butter over medium heat until butter is melted.
Add apples and onions.
Cook approximately 5 minutes.
Place potatoes in the skillet and season with salt and pepper to taste.
Cook until the potatoes are browned to your preference.
