Herbed Rice Pilaf

1 1/2 tablespoon butter
1/2 cup chopped scallions
1/4 cup chopped parsley, dill or basil
2 cups quick cooking rice
2 cups chicken broth
1/4 teaspoon pepper
Salt


In a medium saucepan, melt butter on medium heat. Add scallions and herbs and cook for 1 minute. Add rice and stir. Add broth and bring to a boil over high heat. Cover, remove from heat and let stand until all the liquid is absorbed and rice is tender - allow 5 minutes. Season with salt and pepper.

Serve as a side dish to almost any type of meat.
