Turkey Mini Muffins
1 package (12 oz) corn bread or corn muffin mix 3/4 cups sour cream 2 tsp minced fresh rosemary or 1/2 tsp dried rosemary, crushed 1 egg, beaten 5 thin slices smoked turkey (4 oz) about 3 tbsp cranberry sauce
Directions:
Preheat oven to 400 degrees. Grease a 20-cup mini muffin pan (1 3/4 inch diameter cups)
In a medium bowl, stir together corn bread. sour cream, rosemary and egg just until combined. Spoon batter into prepared muffin cups. Bake for 15 minutes or until golden brown. Cool slightly in pan before turning muffins onto rack to cool.
To serve, split each muffin, cut each turkey slice into quarters. Fold turkey slices to fit bottom halves of muffin, top turkey with cranberry sauce and remaining muffin halves.
